Minnie Lee McCoy 67, of Knoxville, In transitioned to be with her Heavenly Father on February 28th, 2025 with her family by her side. Minnie was known by her affectionate smile and personality. Minnie smiled even when she didn't feel up to it. Minnie did not let a day go by without letting anyone she came in contact with know just how much she loved her son (Her baby).
Minnie worked for many years as a CNA with Knoxville Convalescent.
Minnie is preceded in death by her parents: William and Helen MCCoy, Sisters: Olivia (Libby) Stewart, brother: Frances (Frank) Mccoy, nieces: Carolyn and Sherry Stewart great nephews: Travis Stewart, Troy Cullom.
Minnie leaves to cherish her memories: Son: James( Leakisha)McCoy Bonus son: Steve Simpson Jr., 11 grandchildren , 35 great grandchildren, Sisters: Devoted Sister Julia Templin, Joann Moore, Evelyn and Vicky McCoy, Brothers: William (Judy) McCoy, Arthur (Tammie)McCoy Joseph (Kim) McCoy as well as a host of nieces and nephews too numerous to name. Special niece: Celeste Hayes. A host of family and friends to numerous too name from the Lonsdale Community.

The family will receive friends on Thursday, March 6, 2025 from 12:00pm to 1:00pm with a service to immediately follow. Services will be held at Open Door Church, located at 2806 Sherman Street, Knoxville, TN 37921. Interment to be held immediately after funeral service at New Gray Cemetery, 2724 Western Ave, Knoxville, TN 37921. Pastor Steve Simpson Officiating.
